Associate a metaclass to a particular profile

There are few metaclasses not available to particular profiles,

how do we map those unavailable meta classes to the profiles ?

Profile are designed to display or not display MetaClass.

This is made using CRUD configuration.

If you need a different access to the metamodel, you need to create you own profile and configure CRUD.
